R’evolutionary Reveillon Wine Dinner - Seafood Revolution

A Holiday Celebration Honoring Creole Christmas Traditions

During this season of merriment, Seafood R’evolution is proud to honor its New Orleans roots by celebrating Réveillon, a Creole holiday custom. The grand, five-course dinner will be served on Monday, December 17 beginning at 6 p.m. Admission is $99 per person and includes expertly paired wines with each course. Chef John Folse will guide guests back in time to experience a meal with as much history as there is delicious food. 

“Réveillon is one of the most famous of all evenings in Creole culinary and cultural history,” explains Chef Folse. “A French word meaning ‘awakening,’ Réveillon signals the end of the Advent fast.” Traditionally, South Louisiana’s Catholic community was required to fast on Christmas Eve, so that they could accept Communion at Midnight Mass. 

The Réveillon meal was not only a time of feasting, but of family reunions and thanksgiving. For many years, the more lavish versions of Réveillon had all but died out in New Orleans and the rural areas, but many New Orleans restaurants have resurrected Réveillon menus for the holidays in recent years. Still celebrated in Europe, Réveillon is certainly a historic tradition worth revisiting.
Seafood R’evolution’s Réveillon reception begins with guests enjoying hors d’oeuvres including Smoked Duck Ham, Crab Louie and Cucumber, and Crispy Pork Belly. The Réveillon dinner begins with Gumbo Filé followed by Hearts of Palm on Three Lettuces with Beurre Citron. The fish course features Pan-sautéed Fillet of Red Snapper with Crabmeat and Garlic Beurre Blanc while the meat course highlights Filet of Beef with Sauce Périgueux. A dessert of Poached Pear Tart Papa Noël concludes the evening.
